You have a great question. Coffee does seem to have some positive health benefits - I guess I will live to 100 with the wine I drink.
I have searched for medical article on Med line and could find nothing about non-dairy creamer being destructive to antioxidants. I think the answer to your question is that there is no documented scientific answer to your question.
It would be your own vitamin race.
I tend to think if you take a vitamin before you have your coffee with the non-dairy creamer the anti-oxidants from your vitamin might get through your intestinal wall before the creamer arrives.
